Makes 3# mix or 24 (2oz) cakes
2# shrimp chopped 1 lg. onion small diced and sautéed
2 leeks small diced 3 t. basil minced
2 roma tomatoes diced 1 lemon juiced and zested
3 eggs Salt and pepper
6 c. panko
Take shrimp, leeks, tomatoes, onion, basil, lemon juice and zest, and eggs and add to large mixing bowl. Mix together. Add 2 c. panko and let rest to absorb moisture. Check consistency and add more if needed. Take remaining panko and portion out mix into desired weight. Coat the cakes in panko and form. Sauteed in olive oil and finish in 350F oven, 3 min on each side.
